Orange and Cranberry Muffins
Bake these yummy muffins for breakfast eaten warm with butter or for an afternoon tea! They are full of flavour and packed full of nutrition.
- 1/2 cup golden flax flour
- 1/2 cup Almond meal
- 1/2 cup Tapioca flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp vanilla extract
- pinch of salt
- 4 free range or organic eggs at room temperature
- 1/4 cup rice syrup (honey or maple syrup)
- 2 tbsp melted coconut oil (ghee or butter)
- 1/2 cup freshly squeezed orange juice
- Zest of 1 orange
- 1/2 – 3/4 cup of dried cranberries (or another berry)
- 1 tbsp Apple Cider Vinegar
- Preheat oven to 180 ° C or 375 ° F.
- Prepare a 12 hole muffin tray with liners or grease.
- In a medium bowl mix the flax flour, almond meal, tapioca, baking powder, orange zest and salt.
- In another smaller bowl combine melted coconut oil or butter, sweetener, orange juice and combine.
- Separate the eggs and place the yolks in the bowl with the oil mixture and the whites in a clean separate bowl.
- Beat the egg whites until soft peaks form.
- Stir the eggs yolks into the oil mixture.
- In a small dish add the baking soda and ACV and stir. It will go frothy.
- Add the baking powder ACV mix to the egg mix and then add this to the dry ingredients and fold through.
- Add the egg whites and fold through using a metal spoon.
- Add the cranberries and fold through.
- Spoon mixture into 12 muffin holes.
- Bake for 20 – 25 mins. Test after 20 minutes by inserting a skewer.
Chocolate Coconut Mousse
A smooth rich mousse made with coconut milk and 70% dark chocolate. The ultimate indulgence without all the nasties!
- 1 x 400 ml coconut milk (best to use one without guar gum)
- 100 grams of Lindt 70 % dark chocolate
- 2 teaspoons Great Lakes gelatin (red tin)
- 1 tablespoon coconut sugar (maple syrup, honey or rice syrup)
- Immersion or stick blender
- Heat the coconut milk, sweetener and chocolate in a saucepan over low heat until chocolate and sweetener have dissolved.
- Blend with stick blender.
- Take off heat and let cool for 5 minutes.
- Sprinkle the gelatin over the top and blend again until gelatin has dissolved.
- Pour into a bowl or ramekins and place in the fridge.
- Will set in approximately 2 hours.

Cashew Cream
A delicious dairy free cream that is the perfect accompaniment to dessert, fruit plate or breakfast bowl.
- 1 cup cashews soaked for a min 2 hours or overnight.
- 1-2 tbsp maple syrup (rice syrup or honey)
- 1/4 – 1/2 cup filtered water
- 1 tsp vanilla extract
- pinch of salt
- Immersion Blender or high speed blender
- Drain and rinse cashews.
- Add cashews to blender or large bowl.
- Add 1/4 cup of water to start with.
- Add syrup and vanilla and salt.
- Blend and add more water if needed to get desired consistency.
- Refrigerate to let set.
- Pour or scoop cream onto dessert, granola or fresh fruit.
