A yummy GF LC easy muffin recipe. You can whip these up in about 30 minutes. Perfect for a grab and go breakfast or snack.

2 1/4cupsAlmond Meal or 1/14 cups Almond meal and 1/4 cup Banana flour or another GF flour
1/2cupShredded Coconut or 1/2 cup Dark Choc Chips
2tbshoney or maple syrup
3very ripe bananas
4tbscoconut oil melted butter
1tbsApple Cider VinegarACV
Preheat oven 180 ° C or 325 °F
Mix almond meal, flour, baking powder, cinnamon, coconut or choc chips, chia seeds and maple syrup in a large bowl.
Whisk eggs, banana, vanilla, salt and oil or butter in another bowl.
In a small dish combine baking soda and ACV and let it bubble.
Add the egg mix and the ACV mix to your dry ingredients and stir to combine.
Spoon into muffin tins lined with papers and top with cinnamon or shredded coconut.
Cook for 20-25 mins or until golden brown and a skewer comes out clean
Other flavour combo's could be 1 chopped green apple and apple pie spice. 3/4 cup fresh or frozen berries 1 cup mashed pumpkin with pumpkin pie spice If you need an alternative to almond meal you could try 1/4 cup coconut flour and 1 cup of Tapioca flour, or use 1 1/2 cups of a GF flour mix.
