A baked pancake with a custard middle and spiced apple topping.

Ingredients
  • 2 medium apples, peeled, cored and sliced

  • ½ cup coconut milk + 1 tablespoon
  • ½ cup coconut milk + 1 tablespoon
  • 1 teaspoon cinnamon
  • 1 teaspoon cinnamon
  • pinch nutmeg
  • pinch nutmeg
  • pinch sea salt
Instructions
  1. Preheat oven to 200° C or 390° F
  2. Grease and line a loaf tin with baking paper
  3. Mix the ¾ of the sliced apple with maple syrup or coconut sugar and lemon juice.
  4. Beat the eggs and add the other wet ingredients and whisk together.
  5. Add in the dry ingredients except for cinnamon and nutmeg, and fold through until combined.
  6. Fold through the apple mix.
  7. Let sit for a few minutes to thicken
  8. Pour into loaf tin
  9. Top with remaining apple slices then sprinkle with nutmeg and cinnamon.
  10. Bake for 20-25 minutes or until golden.
  11. Let cool for a few minutes and slice into squares and serve warm.
